Easy Instant Pot Chicken Soup for Busy Days

The weather surprises never cease in Texas, even in December! With a spring-like breeze nudging us outdoors, I found myself yearning to soak up every bit of daylight with the kiddos. The catch? Dinner was an afterthought. However, a satisfying, heartwarming Instant Pot Chicken Soup saved the day!

Ingredients

  • Leftover Thanksgiving Chicken (Substitute with any pre-cooked poultry)
  • Chopped Veggies (Frozen or fresh)

  • 24 oz. of your favorite pasta sauce
  • 2 tsp. ground cumin
    • salt and black pepper to taste
    • 2 cloves chopped garlic
    • 2 tbsp. avocado oil

    Steps

    1. Defrost the Broth: Start by defrosting the frozen broth. Place the container in hot water, allowing it to thaw while prepping.
    2. Prepare the Instant Pot: While the broth is defrosting, add the frozen veggies and chicken into the inner pot of your Instant Pot.
    3. Seasoning: Pour in your favorite pasta sauce. Add ground cumin, salt, black pepper and garlic into the mix.
    4. Add Defrosted Broth: Once defrosted, pour the thawed broth into the Instant Pot.
    5. Oil it Up: Add 2 tbsp. of avocado oil to enrich the flavors.
    6. Mix it In: If you can, give it a gentle stir to blend the ingredients.
    7. Pressure Cook: Cover the Instant Pot and set it to pressure cook on high/poultry or soup setting (considering the chicken is already cooked) for 10 minutes.
    8. Natural Release: Allow the pressure to release naturally.
